For a warm and satisfying vegetarian winter dish cook up some Moroccan style lentils.
2 cups brown lentils 4 cups water 1/2 tsp salt 2 tsp Moroccan Magic 1/2 cup chopped onion 1 clove garlic 1 tbsp olive oil 1 tomato chopped Optional additions Chopped jalapeño peppers Diced red or green peppers Winter squash or pumpkin in 1 inch cubes
Rinse lentils and add to water with salt. Cook over high heat 15 minutes. Then add the rest of ingredients and simmer 45 minutes
Finish with chopped parsley or coriander. Drizzle with olive oil when serving if desired.
