West Coast Salmon Odette

Brilliant, easy salmon dish.

Ingredients,
Salmon fillet or steaks, approx 400 gm
2 cloves garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp West Coast Fusion
2 tomatoes, cut in wedges
1 green or red pepper, cut in 1/2" slices
2 tsp olive oil for pan
optional - 1/2 tsp red pepper flakes
- 1/4 tsp salt

Drizzle the salmon with the olive oil and lemon juices. Rub in the garlic and spices, and let marinate 30 minutes to 3 hours.
Heat a heavy bottom pan, and add the olive oil. Place the salmon in the pan, with the tomatoes and peppers along each side. Cover and cook over medium heat 15 minutes, or until the salmon flakes easily.

Serve with rice or quinoa.
